Maple-Chili Sheet-Pan Salmon With Crispy Chickpeas and Late-Summer Corn

September is a negotiation between seasons. Tomatoes fade, apples arrive, and corn still holds enough sweetness to feel like a gift. This sheet-pan supper leans into that in-between mood without asking for an hour at the stove. Salmon gets a quick maple-chili glaze, chickpeas crisp beside it, and corn kernels caramelize in the same heat. It looks composed on a platter and still fits between work emails and a weeknight ballgame.

The idea began as a pantry experiment: treat chickpeas like the crunch usually reserved for breadcrumbs, and let maple syrup handle the browning. The glaze clings, chili powder and smoked paprika add warmth, and leftovers reheat without turning sad. Serve as written, or tuck flaked salmon and corn into warm tortillas the next day.

Ingredients

  • 4 salmon fillets (about 5–6 ounces each)
  • 1 can (15 ounces) chickpeas, drained, rinsed, and patted very dry
  • 2 cups fresh corn kernels (from about 2 ears) or thawed frozen corn, drained
  • 3 tablespoons olive oil, divided
  • 2 tablespoons pure maple syrup
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 lime, cut into wedges
  • 1/4 cup chopped cilantro or parsley
  • Optional: sliced red chili or red pepper flakes; yogurt for serving

Steps

  1. Heat the oven to 425°F. Line a large rimmed sheet pan with parchment.
  2. Whisk 1 tablespoon olive oil with maple syrup, soy sauce, chili powder, smoked paprika, garlic powder, salt, and pepper.
  3. Toss chickpeas and corn with the remaining 2 tablespoons oil and a pinch of salt. Spread on the pan and roast 10 minutes to begin crisping.
  4. Pat salmon dry. Push chickpeas and corn aside, nestle fillets in the center, and spoon most of the glaze over the fish; drizzle the rest over the vegetables.
  5. Roast 12 to 15 minutes more, until salmon flakes easily and chickpeas are crisp at the edges. Thicker fillets may need an extra minute.
  6. Finish with lime, herbs, and optional chili. Add a spoon of yogurt if you want cool contrast to the sweet heat.

Cook’s notes

Dry the chickpeas well or they steam instead of crisp. Blot juicy corn before roasting. Leftovers keep two days refrigerated; reheat gently. For a vegetarian plate, swap salmon for thick roasted cabbage wedges or halloumi and keep the same glaze.
